  • 4 whole cloves
  • 2 whole allspice berries
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ancho chili powder
  • 1 tablespoon coarse salt
  • 3 tablespoons powdered sugar
  • 8 cups pecans
  • 2/3 cup mirin


  1. Preheat oven to 325F.
  2. Place all ingredients except pecans and mirin in a spice grinder; grind well. Toss with pecans and mirin.
  3. Place on a baking sheet and bake 10 minutes. Makes 2 quarts.
