  • 1 tablespoon grated lemon rind
  • 3/4 cup freshly squeezed lemon juice
  • 2 cups plain or vanilla low-fat yogurt
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 cup fresh blackberries


  1. Combine lemon rind and juice, yogurt, sugar, and salt; mix well. Pour into canister of an ice-cream freezer; freeze according to manufacturer’s instructions.
  2. Serve with blackberries.
